Proxies

These are not strictly wines, or specific spirits made by the traditional ingredients and processes, but beverages made to mimic the complexity of other beverages. Usually made by blending many ingredients, herbs and often ferments, the proxies are looking to give a similar outcome in the mouth using totally different paths.
